Made in France exclusively for New Zealand.

Until recently Sauvignon blanc was not grown in the area but since 1998, new plots have returned to production. On two ideal sites (a former lake bottom with many fossils of oysters and a former river bed of pebbles with flint) the best clones of Sauvignon were planted. The planting density is very high for the region (6000 plants / ha) and the trunks are very short to provide drought tolerance. Pruned  into cord Royat, plowed and trellised rigorously, they are beautiful vineyards. The winemaking is what is now more "traditional". Picked at night  with very good maturity. Then, as quickly as possible, a direct pressing in a pneumatic  press before settling for 24 hours. Finally a temperature-controlled fermentation between 11 and 18°C followed by aging on the lees until bottling in late December. For 4 years now, the result is astonishing in its powerful aroma.  The most important thing by far for this wine is the vine and grape quality.

A pale yellow color with beautiful green hues, the nose smells of straw and citrus. A very strong mouthfeel but roundedThis wine should be drunk young (3 years maximum), it goes beautifully with fish and shellfish or as an aperitif.
